Beth traveled and lived all across the United States and in several countries as a child and teenager following her father’s military assignments.  Because of the diverse situations in which she lived growing up she developed a sense of compassion and concern for people, especially those who have little.  Families and their needs have been a continuing concern for her and she has worked in the field of nutrition, teaching families how to use their food dollars and the world’s food supplies well, for many years in several different capacities.  She has spent the past five years working with Cooperative Extension in the Family Nutrition Program in Oregon and Virginia.
